Chakkali

Ingredients:

1/2 cup Uddina Bele/black gram /Urad Dal
2 cups Akki Hittu/rice flour
1 tsp. Jeerige/cumin seeds
1 tsp. Ellu/sesame seeds
2 tbsp. butter or ghee (melted)
1/2 tsp. asafoetida
Salt to taste
Oil for deep fry

Method:

 Wash black gram nicely and let it allow to dry in a shady place.

In a heavy pan, fry black gram till light brown and let it cool.

Grind it into a fine powder.

To this add the rice flour and remaining ingredients and mix well.

Stir in enough water to make a soft dough. With the help of chakkali press make chakkalis.

Deep fry these in hot oil till light brown.

Drain on paper towel. Store in an airtight container when cool

Tip:

Right temperature of the Oil is very important to get the right crispiness. To check this put small bit of dough into the oil. If it comes up immedietely oil is too hot. It should come up but slowly. That's the right consistency.

To get the crispiness, use chilled water.
